Berry to Bean and all in between...

Welcome to a small display of what we have learnt about the process of HOW COFFEE IS MADE at #Mpenjati on the #Southcoast of #KZN

While working at the coffee farm we have had an opportunity to learn new and interesting processes that #Mpenjati uses to produce their #Locally #Grown and #Locally #Roasted beans.
We enjoy learning new and exciting things about coffee and processing in order to fully understand the #Coffee making processes which will allow us to #Share the #TrueCoffeeExperience to our #Future customers.

The images below are a small example of the drying and fermenting process, which is of vital importance in achieving different and unique flavor profiles from what would be an otherwise common coffee bean.

Fresh berries are hand picked and sorted to prepare for pulping. Sorted berries are put through the pulping machine which separates the bean from the skin and flesh of the berry.

The pulped beans are then rinsed and sorted by hand to prepare them for fermentation and drying process.

This is an example of natural fermentation process. The beans are washed, fermented naturally and then placed on drying racks to sun dry. This is a very important part of the process as that is part of what makes #Mpenjati coffee so SPECIAL!
There is nothing quite like a BOOST of Vitamin D!

This is a close up of the RED HONEY fermentation, once the beans are washed, they are then fermented in red honey and placed on the drying racks to be sun dried.

in the picture above, the lighter beans in the middle are an example of #Mpenjati's YELLOW HONEY fermentation.
