Keep Trying! They look pretty good. maybe just needs a stable environment (temperature/humidity). I once heard you could grow Oysters on hair, so I tried it. It worked, but the fruiting bodies were really tiny and I had no intention of eating them anyway oO You could also try growing them out on sawdust or woodchips from the coffee. Though Straw is the most common substrate. Easiest of all is on stumps, I think. You can get Ikea wood dowels and soak/boil them and add it to your coffee. once they are fully colonized you just need to find logs or a tree that died a few weeks/months ago.
