Not everybody's dish- Chicken Feet with diced hot red pepper & garlic 如何制作剁椒凤爪
Well, this may not be a dish that everybody know how to enjoy it. Most of my American friends dare not even try. I guess chicken feet ignites their imagination. But for those whom really dare to give it a try, this's a pretty good one. I usually snack it. It's hot and spicy, dare you try? :)
要欣赏这道菜还是需要点勇气。 我身边的美国友人基本上就没人敢去试。我猜是这道菜引起他们丰富的想象力了。 但对于那些懂得欣赏的人,这确实是道好菜。我通常把它当小吃吃。很辣,敢挑战一下吗? :)
This is recipe from my younger sister in law. If you've read my previous post, she's a very good cook and enjoys cooking. Many people can cook, but not everybody enjoys cooking. My elder brother is a very good cook too, but he usually doesn't cook unless it's the main holidays like CNY. OK, Let's get it started:
这是我弟妹给的配方。如果你之前有读过我的文章就知道,她很会煮菜,而且喜欢煮菜。我们身边很多人都会煮菜,但并不是喜欢煮菜。我哥哥煮菜的手艺就非常不错,可是要等到他下厨,只能等到逢年过节。
好了,我们直接切入如题吧。
Ingredients-
> 原料:
Chicken feet, gingers, scallions, lemon, salt, sugar, rice vinegar, Sichuan pepper, chilly sauce, chilli pepper
鸡爪, 生姜, 葱, 柠檬, 盐, 糖, 白醋,料酒,花椒,辣椒酱, 辣椒
Process
> 过程:
- Trim finger tip off, put chicken feet into water and soak them for about 1 hour. Try to change water for few times.
- 鸡爪剪去指甲泡水,泡一小时左右,勤换水
- Put cold water into boiler, and add some pieces of scallions, 10 Sichuan peppers, 4 slices of gingers, 2 spoons of cooking wine and 1 slice of lemon into it, boil them together for 10-15 mins in medium to small fire. When the chicken feet can be poked through by chopstick, the feet are done.
- 冷水入锅,放入葱段少许,花椒10粒,姜片4 片,料酒2 勺,柠檬一片,煮开转中小火煮10-15 分钟,筷子戳入鸡爪为宜
- Cool down the chicken feet with tab water, and put them into ice water for about 30mins. Reason for doing this is to make the chicken feet crispy and tender.
- 煮好的鸡爪冲凉后放入冰水里,冰镇半小时(为了让鸡爪更脆)
- While we are waiting for the chicken feet to be cooled down, we can prepare the chilli pepper and garlic.
- 这个冰镇的半小时也别闲着,可以剁辣椒和蒜泥
- Cut the chicken feet into smaller pieces, add salt, rice vinegar, lemon juice and chilli pepper into it and mix them together evenly.
- 鸡爪切小块,放盐,白醋,柠檬汁,辣椒拌匀入味
- Put them into refrigerator for about 2 hours, mix them for couple times in between, and then the dish is ready to serve.
- 放冰箱2 小时,中间去搅拌两次,就可以吃了。
- If you like garlic, you can add garlic to it. And here’s what it looks like.
- 如果喜欢吃蒜的可以放蒜泥拌。拌了蒜的是这样的。
