Fan Lobster Steam | 清蒸九尺扇虾

Fan lobster, also named balmain bug or butterfly lobster, is found mostly in coast of Australia and south Asia. It is only wild-caught, and a bycatch of other fish and prawn so quite rare on the market. The usual way to cook is to boil as a whole or steam the halves, same way as to cook lobsters.

九齿扇虾，一般也叫琵琶虾，之前去海边旅游的时候看到过，长得跟龙虾有点区别，倒是更接近所谓的皮皮虾（广东人称濑尿虾）。在逛淘宝的时候看见有保证活着发货的琵琶虾，店家为了吸引顾客还提供了发货的视频，现在淘宝卖家的服务真是越来越周到了。

收到以后终于明白为什么叫扇虾了，又扁又薄，虽然比巴掌还大，但实际很轻。4个加一块才一斤。样子有点怪怪的，还有点凶凶的，头上的齿又尖又多，看来在海里应该挺凶悍。

做法很简单：用刀切开两半然后加点葱姜蒸熟。虽然肉只有薄薄一层，但饱满有弹性，口感意外地还不错。不过看多了那凶凶的两只眼睛瞪着我，吃起来好像有点障碍，以后大概不会再买了。
