昨天介绍完潮汕美食的肠粉和牛肉粿,馋的自己整夜都肚子饿,忍着饥饿继续写这篇

接着说说蚝烙

潮汕蚝烙,福建叫海蛎煎,台湾叫蚵仔煎。用番薯粉和新鲜蚝仔、鸡蛋煎制而成。两面焦黄,酥而不硬,蚝肉鲜嫩,汁水饱满。装盘的时候撒上香菜装饰,吃的时候蘸取鱼露,绝对是小吃界中的奢侈品。

男朋友第一次去家乡找我的时候,就带了吃了这个呢。几十年的老店,店面虽然很小,但是客人络绎不绝,经常有吃不够的客人继续加单。两三年过去了男朋友一直跟我说,特别怀念,很想再去多几次。

各种freestyle 的粿

在潮汕,举凡是“粿”都是以大米为原材料做出来的,“粿”这种东西,可以入俗,是日常果腹充饥物;可以超凡,作节庆拜祭神灵用。所以,“粿”字在潮汕已经有近乎神圣的意义了。甜粿、草粿、咸水粿、粿汁、粿条、炒粿糕……这就是粿的freestyle啊!

ღ百年传承的做粿手艺

红桃粿,桃果造型,少女心的颜色,香软可口。红桃粿原用于本地人年节祭祀,桃果象征长寿安康,红色寓意吉祥如意,反映了潮汕人祈福祈寿的愿望。

韭菜粿也叫“无米粿”,又一个体现潮汕人民精于持家的特色小吃。米粉做皮,韭菜做馅,蒸熟之后颜色诱人,晶亮透翠,吃起来筋道鲜香;煎烙着吃,口感更佳。

草粿,也是潮汕地区一款颇具地方特色的大众化小食。每当立夏之后,潮汕地区,便有卖草粿的小贩,或挑着担子,或推着单车,穿街过巷,一边吆喝,一边拿铲草粿的金属片或者贝壳,不停地“叮叮咚咚”敲着,以招徕生意。在童年,那声音和着蝉鸣,几乎是夏日午后最动听歌。

草粿以仙人草为原料,混合淀粉熬煮,待冷凝成膏状即可食用,冷藏后拌些白糖粉,消暑解渴,还有清热解毒、退肠火的功效。

粿条,不同于广东其他地区的河粉,粿条更有弹性,浓郁的汤底,加入丰富入味的猪杂,爽脆的生菜,除了埋头狂吃,还能怎么表达对它的喜爱~

也可能是对家乡的特殊情感,我有好多好多次在路边看到写着潮汕粿条汤粉的招牌,都忍不住进去尝尝,再仔细听听老板的声音是否是熟悉的乡音,若是,心里便美滋滋起来,一天的心情也可能就因为这样一点点小事开朗起来。

糖葱薄饼也是潮汕地区特有的传统小吃,在《舌尖上的中国》1露过脸。薄饼卷着糖葱,洒上碎花生米黑白芝麻加上一根香菜,饼皮柔韧,糖葱松脆,口感软脆有层次。

小时候放学回到家,问上妈妈要几块钱,下楼买糖葱薄饼,姐弟几个分着吃,就觉得是天底下最美味的甜食~

每个人说起家乡可能都会滔滔不绝,古今之人都十分眷恋自己的故乡,人,物,事等等。祝愿每一个离家的人,都能常回家看看,多吃几次妈妈煮的饭。
