I'm gluten sensitive. What would you suggest to put instead of weath flour?

thanks @allfabeta, Normally, noodel are made by this flour which contains gluten. so I have no idea sorry.

Usualy, instead of weath flour , I use coconut flour, but doug with coconut flout more rude. I'll try some another flour.
