As you pointed out, Jesus was quoting from Psalm 82:6 when confronted by the crowds accusing Him of blasphemy . The psalmist was referring to Exodus 21:6a:

then his master must take him before the judges. NIV

then hath his lord brought him nigh unto God, Youngs Literal Translation

HaElohim הָֽאֱלֹהִ֗ים - (literally the gods) but often translated as "the judges" (of Israel).

These were men who were appointed to judge on God's behalf who were called gods.

But ye shall die like men, and fall like one of the princes . Psalm 82:7

Even though the judges (gods) held a lofty title and were God's representative, they were mortals. The use of the word princes denotes that they would die as other persons do regardless of rank or position.
