Chinese Food Recipe - Quick and Easy Egg Rolls
I love Chinese food! I made these Easy Egg Rolls for snacking yesterday and they were delicious, hope you can Enjoy too.
Ingredients You will Need:
Frozen or fresh Egg roll/Spring roll wrappers
1/4 cabbage
2 carrots
3 spring onions
2 cups pork mince meat or Veggie meat (if you are vegetarian)
Oil for frying (Coconut or Vegetable oil)
1 tbsp sesame oil
Salt and Pepper
1 egg white
Remove egg roll wrappers from the freezer and let them thaw with a wet towel over them.
Chop Vegetables finely or put them in a food processor or Thermomix to chop.
Heat oil for frying in a Wok
Fry mince or veggie meat for 3-5 minutes
Add chopped vegetables and fry for 3-5 minutes
Add sesame oil and Salt and Pepper and fry for 1 final minute.
Remove from heat and let the mixture cool.
Gently pull a spring roll wrapper from the corner and place on a board
Place 2 tbsp of mixture onto the bottom left corner
Roll tightly to the centre
Fold the left and right edges into the middle, it will look like an opened envelope at this point, seal with egg white.
Continue rolling and seal the end with the eggwhite, place on a plate under a wet paper towel ready for frying.
Repeat until your mixture is gone or when you think you have enough you can save the mixture for another day.
Heat 2 tbsp of frying oil in your wok on medium/low heat depending on the oil. Coconut oil is more forgiving than Vegetable oil, so keep it low if you are using Vegetable oil.
Place 4 spring rolls in the oil and gently fry for 3 minutes. Turn over and fry for a further 3 minutes.
Place on paper towel to absorb oil and serve with your favourite dipping sauce (e.g. soy sauce, sweet chilli)
