Making food based on pumpkin. Publication # 1: Step by step in the preparation of pumpkin cream.

While visiting the house of my nephews in the East of Venezuela, I observed that an excellent product such as pumpkin was absent in their diet.
Talking to my nephews' mom about the subject, I suggested she buy a pumpkin to make a cake or a pudding for the children to eat. For reasons of work, my sister in law had to travel to the city of Tucupita, in the Delta Amacuro State. There she was amazed to see an outdoor place where large pumpkins were sold. Unfortunately she did not take any image of this place to share it with you; however, he bought two beautiful pumpkins. You know how much was the sale price / kg., Just 300 Bs, which represents around 0.037 $ / kg.

The squash is a vegetable that was introduced to Europe from America as part of the colonial process. This vegetable undervalued in popular culture (some call it contemptuously as pork food), is very rich in nutrients. It provides great vitamin richness, specifically beta carotene, Vitamin A and antioxidants such as vitamin C and E.
When we cut a piece of this pumpkin I had an organoleptic surprise before not experimenting with this type of vegetables. Specifically, I refer to an intense sweet smell that gave off, smell similar to that of the pin or watermelon. Investigating a bit on the internet I found out that this vegetable is related to the aforementioned fruits.
Already going into details, today I will show you the process to follow for the development of pumpkin cream, a dish of high nutritive component and recommended for all members of the family for being a source also of lycopene, of various vitamins of group B (B2 and B &), folic acid and minerals including potassium, phosphorus, magnesium and zinc.
After cutting the piece of pumpkin to be used for the preparation of the cream, it is cut into small pieces. The cream can be prepared by removing the cortex from the pump; however, on this occasion my sister-in-law decided to withdraw it.
Once the pumpkin is cut into pieces, they are washed to begin their cooking process.
The pumpkin pieces are placed in a pot to which mineral water and a small touch of salt are added. They are cooked over medium heat around 20 to 25 minutes until it is cooked, you should not exceed your exposure to fire because the nutritional properties of this noble vegetable are lost.
While the pumpkin is being cooked, the dressings with which the pumpkin cream is going to be seasoned are prepared. This time my sister-in-law did not let me know that I was preparing them, I suppose it was so that we didn't observe her secret touch hahahaha. In this case, the condiments included finely chopped onion and paprika pieces, some garlic cloves and what they call “monte” or herbs like coriander and parsley.
The seasonings, the cooked pumpkin pieces and the water used for cooking are poured into the blender to mix them and reduced to form a homogeneous and thick liquid, this process does not take more than a couple of minutes.
Once the pumpkin cream is obtained, it is served for tasting.
Parmesan cheese or pieces of toasted bread are added, including some parsley leaves. Given the unavailability of Parmesan cheese for its high price in Venezuela, this time we accompany it with a fresh and rich white cheese from the local production.
