Daily Celestial Challenge - Saturday Agriculture: Harvest and Dessert
Hi friends!
For Daily Celestial Challenge today, the theme is of Saturn, Roman God of Agriculture. I am sharing a couple of pictures I took when I was helping local farmers in Lombok Island, Indonesia, harvesting....(drum roll please)....MUNG BEANS!!
Mung beans to some are also known as moong beans, gram (green gram) and/or mung. The Indonesian call them kacang hijau which literally translated to green beans, and they are used mostly for sweets but also in soup and snacks.
Here I am also sharing a recipe to make Indonesian sweet porridge that is dessert type, but also can be served for breakfast and throughout the day. It is called bubur kacang hijau - mung beans porridge.
It is served with sweetened black glutinous rice porridge and salted coconut milk. It can be served warm or chilled or even with crushed ice and sweetened condensed milk.
Ingredients
- 1 cup water
- 1/2 - 1 kg sugar
- 1 pack (450 grams) mung beans, rinse and soak overnight
- a dash of salt
- 1 pack black glutinous rice, rinse and soak overnight
- 1 tsp vanilla essence
- 1 can (450ml) coconut milk
- 2 screwpine leaves (Pandan leaves); tie in knot
Method
- Bring mung bean with enough water to a boil and add in 1/2 kilo of sugar, cook until tender/soft, add in vanilla essence
- With the same method, boil glutinous rice in enough water with 1/2 kilo of sugar, cook until tender-porridge texture, do not forget to always stir it occasionally as the rice would get sticky and turn into porridge (adding more water as needed)
- Bring coconut milk to a boil, add in screw pine leaves, add in salt to taste, and a cup of water, stir well
- How to serve: in a small/medium size bowl or plate, put in one scoop of mung beans porridge, add glutinous rice porridge, stir in enough coconut milk
- Note: Add more water and sugar if it's needed (while boiling) to make the volume more and to make the porridge sweeter. For the sweetness, is depending on you, so you can less the amount of the sugar obviously
