hey there ecuadorhomestead! hey what part of the cassava tree gets eaten? the leaves like a salad? I thought you'd just plant seeds so that's interesting!

We eat the roots of the plant. The leaves I think can be eaten, but I am not sure.

howdy again on this fine Monday ecuadorhomestead! eat the roots, by boiling or steaming them, it seems like they'd be tough. do you ever miss the U.S.?

Around here we boil it. No, do not miss the United States. I is a lot better here!

wow ecuadorhomestead! not at all? not even the restaurants or amenities?

After hearing about all the things that they put in the food and the fact that it is safer here. never want to go back there to live. Maybe just to visit.

howdy back again ecuadorhomestead..well that is very interesting and I'm glad that you guys like it there so much, and I'm sure there are towns close by that you can go to if you want a restaurant or something?

Yes, there is a town near where we live and it has lots of restaurants that we like!

Never heard of Cassava before!

I eat at a local Dominican restaurant often. Sometimes they have it streamed or boiled, and sometimes they have it fried. They called it yuca (you-kuh), which is different than yucca. Some yucca plants do have edible fruit.

We eat boiled here in Ecuador and yes it is also called yucca that is the Spanish name for it.
