Pineapple Upside Down Cake
Sometimes starting a work seems so difficult. Especially when you are not confident enough. But when it is finished, you feel so accomplished especially when it is done so beautifully and the end result is sweet.
It was my daughter’s birthday and as usual I decided to bake a cake but this time thought of baking a cake which I haven’t made for ages and is little tricky. So was little anxious.
It so happened that I didn’t get time till last mommet. Now I was tensed what if I don’t succeed. Instead of a surprise it will be a shock.
With tons of doubt on my mind I started this Pineapple upside down cake!
I was little apprehensive if the pineapple will come out properly while turning it upside down. The trick is make the bottom greasy enough so that nothing sticks on it.
The cake should be soft at the same time sturdy enough to take the weight of pineapples.
But even after so many doubts it was a perfect cake I have ever baked! It came out fantastically and was delicious. Baked to perfect!
Sharing here the recipe and the photos-
Toppings:
8-9 - Pineapple Slices
Few cherries
Brown sugar to sprinkle over baking pan
Melted butter to grease the baking pan
Ingredients:
1/2 cup softened butter
3/4 cup sugar( in fact little less than 3/4 as pineapples and cherries are sweet)
1 tspoon Vanilla essence/pineapple essence
1 1// cups all purpose flour
2 eggs
1 1/2 tspoon baking powder
1/2 cup milk
Method
Preheat oven to 350F (180C)
Pour melted butter on the pan. The whole surface should be dipped in butter. Grease sides of the pan too.
Now sprinkle brown sugar all over it.
Arrange pineapple slices over it and cover any holes with cherries.
Arrange it on the sides of the pan also.
In a dish beat sugar and butter till it becomes creamy.
Pour eggs one by one and mix it. Add vanilla/ pineapple essence.
Now add flour mixed with baking powder , fold it in the batter and add milk . Mix it properly.
Now pour this batter on to the baking pan.
Bake it for 35-40 minutes. To check if it is baked insert a toothpick. It should come out clean.
Let it cool down for 15 minutes. Gently make the pan upside down on a palte. Beautiful rings of pineapple with cherries on the holes sitting on the top of a simple cake is ready.
