Victoria printing
Yes, there are a few possibilities besides Office Depot.
For what you're describing, I'd separate them into commercial printers and publishers.
Commercial printers (probably your best bet)
These companies are accustomed to printing books, manuals, reports, and similar materials.
Martin Printing Co — Long-established commercial printer in Victoria. They would be one of the first places I'd call to ask whether they can produce a perfect-bound paperback similar to your KDP edition.
Instant Copy & Printing — Another Victoria printer that may be able to produce short-run books or direct you to a bindery if they don't do perfect binding in-house.
Victoria Blue Print — Primarily a printing and graphics business, but worth asking what book-printing options they offer.
Actual publishers
I did find:
Wexford Publishing — A publisher located in Victoria. From what I can tell, they appear to be a small publishing business rather than a walk-in print shop.
Whether Wexford would be interested in a specialized scientific/historical work like The Ganymede Hypothesis is another question, but they're certainly worth knowing about.
My recommendation
If I were in your shoes, I'd probably make a few phone calls after your KDP proof situation is resolved.
I'd ask something like:
"I have an 8×10 paperback, around 300 pages, mostly black text with some color illustrations. Can you print 10, 25, or 50 copies with a glued paperback (perfect-bound) spine? If so, what would the approximate cost per copy be?"
That's a very common request, and they'll usually be able to give you a rough estimate.
For your purposes—selling around Victoria, giving copies to friends, or taking books to meetings—I actually like the idea of having a local printer. It gives you another distribution channel that doesn't depend on Amazon.
If Martin Printing or Instant Copy can produce a book that's close to KDP quality at a reasonable price, you could have, say, 25 copies printed whenever you need them and avoid Amazon entirely for local sales while still using KDP for readers elsewhere.
