Trying to make cheesecake cookies!
Strawberry Cheesecake Cookies
Brown sugar cookie
So, I've been in a baking mood lately and wanted to try this recipe from Aymen on their TikTok's Linktree Strawberry Cheesecake cookies recipe.
I followed the recipe quite closely but didn't add salt or use salted butter
Instead I used unsalted butter, I don't think there would be any difference in terms of taste for sure!
Dough chilling in the fridgeI had to chill the dough for an hour
This step was fine but I was quite worried about the dough - I hadn't baked for a long time, and honestly wasn't sure if the dough was looking as it should have because the recipe I was following doesn't show pictures with the steps.
Rolling the dough in sugar!

Another step I hadn't done in the past was rolling the cookie dough in sugar while putting it on the baking tray - I varied the amount I did on each cookie as the recipe already had a lot of sugar involved. I didn't really notice the sugar after I had put the frosting so I don't think it mattered too much.
I adapted the recipe a bit
So the original recipe is obviously titled Strawberry Cheesecake cookies but I don't have any strawberries so I tried to use some apple puree and apples, which I think still worked, you could definitely just do whatever you want as the topping to the frosting and cookies.
The finished product!

The recipe I used had a yield of only 6 cookies but I'm not sure how I came out with 7! Happy though as there was one extra for me to eat haha.
I would definitely recommend the recipe as the results were super delicious. The recipe itself wasn't too difficult to follow. I will definitely be making it again in future!
Hope my post looks a bit nicer! Tried to do some html formatting
