Those breads look really good and your sourdough seems like a good, healthy one. Do you feed it with regular flour or wholegrain flour?

the yeast must always eat what it is made of, otherwise it loses strength and fails to leaven. obviously a yeast of organic white flour is much stronger than an integral basic yeast and allows a better leavening. it is obviously also used for wholemeal doughs. I hope I was helpful.
