Fat WAFFLES with HONEY :)
Hi, I'm here to show you how using our new Nordic Ware Cast Aluminum Waffler goes. Our original goal was to get a cast iron waffle iron with no non-stick coating, but it was for a Christmas gift so that didn't "pan" out too well ;P
We wanted a cast iron because I am well versed in seasoning, and we wanted to avoid using petroleum products. O well, maybe next time we'll get one with no teflon or plastic handles!

Here is the iron:
and here is the very simple recipe, which makes about 2 waffles in this waffle maker:
1 cup milk (or dairy free milk)
1 cup Gluten Free flour blend
1 Tbsp butter (or sub oil for dairy-free)
2 eggs (or flax eggs for vegan option)
1 Tbsp maple syrup, honey or agave
We doubled the recipe today especially since guidance online says to use about 1.25-1.5 cups of batter per waffle (that's a lot!)
We used this flour
And sunflower oil for lubrication/baking:

We have an electric stove, but we used heat setting 7 on a 10" burner. (medium heat)
Heat for about 2 minutes on each side, then,
Grease it up! (my boo is 9 months pregnant! :D)
And pour it on!

There are few important parameters: heat, time, oil.
At some point, adding more oil wont do anything good. Especially for the stove top you might just end up burning oil. For me, that meant irritating my sinuses for the day. Not fun. Oil is not as important, but it does contribute to the texture of the surface of the waffle.
Heat: if it is too hot, your waffle will be less cooked in the middle and too cooked on the outside. This is because the heat is not allowed time to diffuse through the batter, and heat evenly. High enough heat is needed to cause the surface to brown (more than the interior) and to fry against the oil. This makes a smooth surface which can be pulled away.
Too cool and the waffle may stick.
Time is pretty intuitive. Our best guidance is loose: 45 sec-1.5 min first side, 3-4 minutes second side. You may need to cook the first side again. Play that by ear! The waffle bake should be nearing completion when the steam/steem out the side decreases greatly or ceases to flow.
It takes finesse, not all our waffles came out good, but most did :)
Lastly, please consume thoughtfully! We used local honey and Vermont maple syrup with our waffles. Im not sure how the maple syrup was produced, but the honey came from within 70 miles of our home. Bees are being very mistreated worldwide, and their honey adulterated. It is a massive worldwide trade, and many people are desecrating the whole process.
