Filipino Cuisine and Ilonggo Dishes

Recently this afternoon we took our lunch as I visited a closed friend of mine here in Silay urban area or we called " Uma ". Then we buy some vegetables and needed ingredients to cook ilonggo Dishes for our lunch. My friend just arrived last week from Saudi Arabia, as he really wanted to eat local dishes to refresh from 2 years meaty experienced. We all know that it is very rare to have vegetable meal in some other countries specially in Arab country. According to him they eat the same food every week or every other day due to limited options available.

Now let me share to you what we've got this morning from the market or merkado. Then we'd harvested some crop from their small vegetable garden. We have pumpkin or kalabasa, malunggay or balunggay, eggplant or talong and other assorted vegetables.

After we prepared all the vegetables and ingredients my mom's friend together with us we just cooked the ilonggo dishes. The first dish is called Adobong Takway with main ingredient the takway or “Poor man’s asparagus. This high succulent vegetable are commonly growing in swamps or place where there is presence of water. A cheap vegetable but not easy to prepare for cooking, because you need to peel it one by one with slimy soft characteristic. Takway can be added to some vegetable soup together with legumes. But this time we just simply seasoned and simmered it with common condiments like soy sauce, vinegar, pinch of salt and pepper, chopped garlic, sliced onion, shrimp paste and added a cup water then let it simmer for 20 minutes. Then ready to be serve and you can enjoy your adobong takway.

Next dish is called " Utan nga monggo or vegetable soup with mung bean " A common type of bean used in most filipino cuisine. It could be dark color green, yellow, or yellow green and can transformed into been sprout called tauge used as an ingredient in making spring rolls or lumpia, This time we used monggo as main ingredients to our vegetable soup. We also add dahon alugbate or spinach leaves, shrimps, eggplant or talong, pumpkin or kalabasa, balatong or soybean/chick-pea. All these ingredients together in one pot to make a monggo vegetable soup is extremely delicious and healthy. But not really advisable if you have arthritis as it will will trigger the pain because of the uric acid content to most beans.

Third dish is called Laswa or famous ilonggo vegetable soup dish. This meal is one of the healthiest and very rich soup. It is also consider as recovery meal for sick and ill people on or after getting health issues. Because of its pure vegetable ingredients combined and mixed in one casserole. No added oil ingredient, simply water, eggplant, pumpkin, soybean, tugabang or jew mallow, little amount of shrimp paste , shrimps or hipon, and okra or laddie's finger. Then let it simmer for 20 mins and will give you the slimy appearance for final product. It is perfectly partner with uga nga tabagak or dried tabagak fish.

Filipino cuisine is something that we should be proud of. Because in different places here in our country like in Visayas region. We have ilonggo dishes that we can contribute to Philipine food category. Where some provinces have their own signature dishes which is adapted already by other some regions even international cuisines.
