Cinnamon Raisin Granola

The prices in the cereal aisle are nearly pushing my budget over the edge. Granola is a great breakfast cereal, and this recipe makes a good-sized batch at a relatively low cost. Although, with just enough sweetness and just the right amount of crunch, this granola might disappear quicker than the average box of cereal, probably because I will be eating it afternoon and night as well!

  • 4 cups old-fashioned oats
  • 1 cup shredded coconut
  • 1/4 cup packed brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons vanilla extract
  • 1 cup raisins
Preheat oven to 350 degrees. Combine oats and coconut in a large bowl, and set aside.

In a saucepan, combine brown sugar, oil, honey and cinnamon. Bring to a boil. Remove from the heat and stir in vanilla. Pour over oat mixture, stirring to coat evenly.

Spread oat mixture in a large shallow baking pan. Bake for 15-20 minutes, stirring occasionally. Remove from oven when oats begin to turn golden brown and look crunchy. Let cool for five minutes on stove top, then stir in raisins. Store in an airtight container.

Tips ...
The sweet ingredients come to a boil very quickly. Keep your stove on medium-high, stir constantly, and make sure to remove the pan from heat as soon as the mixture begins to boil. In order to really make my new favorite breakfast last, I decided to mix in a cup or so of corn flakes (the store-brand variety, and only because they were on sale). It will be nice to wake up for the next month looking forward to this homemade cereal creation!
