Wild Berry Jamboree: Picking, Preserving, and a Porkloin
The best way to tell a story is to give a flash reveal of the ending!
And so this post follows that tradition with a thumbnail of tonight's meal: a "stuffed" porkloin with wild blackberries and homemade Farmer's cheese.

We have been raiding this nonstop berry fountain all summer! First, a trip with @madpotters, then a fruitful wander with my boy:
A video wherein our dog discovers how to fetch his own berries!
And just this past Saturday, @mattlovell drove us on over to Mountain Home Creek to pluck 8 cups for me to preserve holiday gifts for the family.
I sorted them, and strained the lesser fruits through a fine sieve.
Fruit and strained juice go together into a large, nonreactive pot.
About 5 Chipotle peppers in Adoba sauce, processed finely, go in the mix. Sugar and homegrown lemon juice add to the slurry.
These come to a rolling boil, then liquid pectin gets squeezed into the pot. I bring it back to a rolling boil for 1 minute.
That's it! That's all that goes into Wild Blackberry-Chipotle Jam.
I poured it into 7 sanitized half pints, then processed in a rolling boil for 10 minutes.

Glazed and Stuffed Porkloin
Ah yes! A delicate porkloin with a tragically botched butterly slice marinates in some soy, lime, and garlic. And just the juices from the Jam. Meanwhile, I prepped chopped spinach and fresh Farmer's cheese I made myself.
Topping off the "roll" with the fat side of the tenderloin,
And topping it off with the remaining marinade plus some fresh jam:
Roasted for 30 min at 450F, covered, then broiled for just a couple of minutes:
Cornbread always goes well with pork, so that's what I paired it with: a nice homemade buttermilk cornbread lavished in butter, and with just a dribble of full strength jam!
And so goes the tangled walk through a briar patch to a delectable dinner.
Add more traffic to the road less traveled!
