I have never heard of a Green Coffee, what exactly is that?

I should really do a post following coffee plant to cup. Trying to make it as simple as possible - coffee beans grow on a coffee plant as two half beans inside a red cherry - so coffee is two seeds inside a single cherry. The cherries are picked, pulped to remove the coffee seeds from the cherry and then washed and often sun dried on big drying patios. These dried seeds are then sorted and bagged as "green coffee beans" the traded commodity. Before we can use these to drink - they have to be roasted turning them from green to brown - the roasting process removes most of the remaining moisture from inside the bean - when they are nearly done they make a cracking noise as the last moisture from the centre of the bean escapes. After roasting the coffee normally needs a few days to rest before it can be consumed. Sorry about the allergies - it can affect different people in different way - there are still some good decaffeinated coffees if that helps?
That;s interesting to know, I assumed Green coffee is one of the variety, but it's a process. It will be nice to see some post on more information. I love the aroma of the coffee. The problem is I am getting allergic to milk, I love Cappuccino, but in the last few years have stopped. I have never tried a decaffeinated coffee, wonder how it will taste.
