Chicken Frittata Muffins - Banting Friendly
8 Large Eggs
30ml cream
90ml full cream milk
1 cup Cooked Chicken
1/2 Cup Cheddar Cheese
1 Tbsp. Butter
2 tsp. Dried Parsley
1/2 tsp. Pepper
1/4 tsp. Salt
Instructions:
Preheat oven to 180°C.
Mix eggs, milk and cream in a bowl until almost scrambled, leaving streaks of egg white.
Fold in the chicken, cheese, and spices.
Add any other additional ingredients now. I added some home made chili sauce.
Grease a muffin tin with butter. This recipe makes about 10 frittata muffins.
Pour the mixture in the muffin tin, filling each cup about 3/4 way.
Stick them in the oven for 15-18 minutes, or until puffy and golden on the edges. Mine was in the oven for 20 minutes.
Remove from the oven and let cool for 1 minute.
These freeze well and can be heated individually. I reheat 2 at a time for 1 minute in the microwave and they come out perfectly heated every time.
