Chocolate Chip Donuts

These donuts didn’t even last 24 hours in my house (which is okay, since they are best when eaten fresh). The mini chocolate chips plus the melt in your mouth batter make these donuts irresistible. Plus they’re baked, not fried, which makes them slightly better for you and more accessible than other donut recipes. They take about ten minutes to whip together and another ten to bake, so get cooking, you could have yourself a fantastic little treat in 20 minutes!

Ingredients:

  • 1 cup miniature chocolate chips
  • 5 tablespoons unsalted butter, room temperature
  • ½ cup light brown sugar
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup half & half (milk is fine, too)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup flour
  1. Preheat oven to 350℉. Prepare donut pan by greasing with light amount of cooking spray.
  2. Place butter, brown sugar, and salt in a mixing bowl and mix with electric mixer until well combined and fluffy.
  3. Add egg and vanilla and continue to mix until fully incorporated. Mix in the half & half in two additions, again mixing until fully incorporated
  4. Add in the flour, baking soda, and baking powder. Mix until well combined, then mix for an additional 3 minutes. The batter should be somewhat thick.
  5. With a rubber spatula, gently fold in the chocolate chips.
  6. Fill prepared donut hole pan, careful to fill each recess only halfway.
  7. Bake for 11 minutes, the edges of each donut will be golden brown.
