The Best Molasses Cookies
Chewy Molasses Cookies
As a newcomer to the community I would like to share with you my own recipe for molasses cookies. I hope and encourage you to enjoy these cookies at home with your family!
INGREDIENTS:
- 1 3/4 cups Flour
- 1 tsp Cinnamon
- 1 tsp Ginger
- 1/2 tsp Salt
- 1/4 tsp Baking Powder
- 1 tsp Baking Soda
- 1/4 cup Brown Sugar
- 8 tsp White Sugar (seperated)
- 1 tbsp Vanilla Extract
- 1/4 Butter (softened)
- 2-4 oz. Lemon Juice + 1 tsp Baking Soda (mix)
- 1/4 cup Molasses
- 1 drizzle Olive Oil
Directions
In one bowl
- Use a wisk to combine Flour, Cinnamon, Ginger, Salt, Baking Powder and Baking Soda.
In a separate bowl
- Using a hand mixer combine Butter, Vanilla Extract, Brown Sugar and 5 tbsp of White Sugar for 5 minutes or until fluffy.
- Add Baking Powder and Lemon Juice until fully combined.
- Add Molasses until just combined.
- Begin slowly adding Flour mix.
(At this point the dough should be dry) - Drizzle Olive oil to moisten and begin mixing again.
(Dough should be thick when done) Once combined, cover and let chill for 30 minutes.
When Ready
- Preheat oven to 350°F
- In a small bowl have 3 tbsp White Sugar.
- Roll dough into balls 1 tbsp each.
- Roll dough balls in Sugar
- Place 1 inch apart
- Bake for 8-12 minutes
- Immediately cool on wire rack
DO NOT OVER BAKE!!
