Preheat the oven to 180C / 350F and line a big baking tray with silicone or baking paper.

Cream the butter, sugar, espresso and vanilla in a bowl with an electrical mixer. Add the egg and beat till gentle and fluffy. Sift the flour, baking powder and salt and briefly combine.
