Ajay Sud (Entrepreneur)
A chef by profession, Ajay Sud has had a long and successful culinary journey. After arriving in Australia in 1985, he started his first Indian restaurant, Ajmer Indian restaurant in 1986 in Balgowlah with Ajmer Singh. He then started Jaggas in Eastwood, and in collaboration with his sister, established Memsaab in St. Mary’s. From there he moved on to start Gandhi At Ettalong, which catered to the cravings for Indian food in the Central Coast.
The Jaipur Bizarre in Gladesville was his next venture. In 2004, he started Mantra Indian restaurant that became extremely popular, featuring in the Spectrum section of the Sydney Morning Herald and in Channel 7’s evening show, Sydney Weekender. This boosted Mantra’s popularity that there were serpentine queues every day… of people waiting to dine in.
Ajay took a five-year break from the kitchen to work in the construction industry in Mumbai. He is now back in Sydney and has started his new Indian restaurant in North Ryde called Vama with the tagline ‘essence of feminine power’.
He attributes his success to the generosity in the hospitality industry. He is famous in the community both as a restaurateur and as a caterer for high profile functions. Ajay’s world revolves around everything culinary. He loves travelling to new places and learning about what is new in the food business.
