HONEY is the most ancient ingredient that human consumed. Cave paintings in Cuevas de la Araña, Spain, depict humans foraging for honey at least 8,000 years ago. Honey is a sugary substance that is made and stored by specific social insects, mainly hymenopterans (comprising the sawflies, wasps, bees, ants and etc). It is produced through the evaporation of water and regurgitation enzymatic activity. Honey that is made by honeybees is popular as it is commercially produced and consumed by humans worldwide. depend on each hive location may vary the taste and the flavor due to it's local inhabitant nectar sources for the insect collecting nectar. Honey is the only sweetener that does not require processing. When beekeepers harvest the honey, the activity in the hive has already refined it naturally.

Honey gets its sweetness from the monosaccharides fructose and glucose, and has about the same relative sweetness as sucrose (granulated sugar). It has attractive chemical properties for baking and a distinctive flavor when used as a sweetener. Most microorganisms do not grow in raw honey because honey itself is a anti bacterial substance, so sealed honey does not spoil, even after thousands of years. while It may crystallize this can be remedied by immersing the container in hot water. Always keep honey in close container for storage purpose.

HOW HONEY BEE CREATE HONEY ?

Honey is first acquired from the nectar of flowers. After derived, nectar is naturally broken down into simple sugars which are eventually stored in honeycombs. A honeycomb is a structure of hexagonal cells of wax that is made by bees to store honey and eggs. As bees flap their wings, evaporation occurs in the honeycombs creating the thick sugary liquid known as honey.
The flavor and color of honey differs from hive to hive depending on the type of nectar collected by the bees. For example, flower nectar collected from avocado or wildflowers might produce honey that is dark amber in color whereas nectar collected from orange blossom might produce honey that is light in color.
Depending on its nectar source, taste of honey can be floral, fruity, smoky, woody, spicy, nutty or earthy. It can smell fresh as grass or pungent like aged cheese. It can look nearly clear as water or dark as molasses.

HONEY vs GRANULATED SUGAR ??

  • Honey is contain more calories than sugar (teaspoon of honey contains 23 calories , compared with a level teaspoon of sugar, which contains 16 calories )
  • Honey is more healtier than sugar itself ; while honey contain high nutrients, granulated sugar is not.
  • Honey is more flavorful than granulated sugar ; depend on the color of the honey, Color ranges from nearly colorless to dark brown, and its flavor varies from delectably mild to distinctively bold
  • Honey is more sweeter than granulated sugar; 1 cup sugar (250 gr) = 3/4 cup honey (175 gr) + 1/2 tablespoon (2 gram baking soda for every 3/4 cup honey to reduce acidity from honey)
  • Honey is more hygroscopic than granulated sugar, it retains more moisture than sugar, every 1 cup (250gr) of honey you added for subtitute always reduce all liquid 1/4 cup (55gr)
  • Baking a product with honey, always reduce the temperature slightly because baked goods made with honey will brown faster in the oven than granulated sugar product.
  • Honey is more expensive while granulated sugar is very cheap.
