Macaron Towers..
As you may have already seen on TV or at parties, where macaron towers were created using Styrofoam. Not only are Styrofoam shaped cones expensive, but they are bad for the environment and our health too.
So I first opted to use a different stand that is reusable and adjustable to any size. However it became unavoidable when a client wanted a Styrofoam one or when it would be difficult to return the stand. And I didn’t exactly want to lose my stand either because that cost me quite a bit too.
All up during my baking years, I had made only 3 macaron towers using Styrofoam. The rest I used the reusable plastic stand, as previously seen in my past post on the Christmas Tree Macaron Tower.
Here is a picture of another tower I had made for a friend’s baby’s 1 month party using the reusable tower. The flavours were salted caramel and chocolate. This was actually one of the best versions of these flavours I had made. It had taken me a couple of tries to get the chocolate macaron perfect due to a change to the recipe to make the chocolate shells.
Hummm I hope I wrote the recipe amendment down somewhere, because I don't remember what I changed exactly hahaha
For each macaron tower using the styrofoam, I wrapped each foam cone with paper to create a barrier to protect the macaron from coming in contact with any fine Styrofoam that may have come loose. A sharp toothpick is used to stick halfway into the foam. A macaron is then pierced through the other half to hold into place. As you can see from the first lot of photos, it does create a nicer look and allows you play around with the patterns more.

I had also made mini macarons for the candy buffet. I was told they were a hit and were gone in a flash. Those who missed out had approached the bridal party to ask if they could take one of the macarons from the main stand next to the cake. They were gone too, the bridal party ended up missing out on the macarons. Luckily the groom had taken one up to the bride earlier when I was there to set up.

Although with these macarons, I had used pearl lustre sprays on all the macarons for a more elegant look. I had also made edible flowers which I had also pinned to the cone.
Here is my sketch of the design and planning stage for this particular macaron tower. As you can see it requires a good number of macarons to create a tower.
Therefore there is a set limit to how many macarons are required to make a tower. This can make them quite expensive to purchase/make. Especially when you want a tall tower.
These all look so beautiful, did you say you don't bake anymore, that would be such a shame.
Thanks @white.tiger. That is correct, I don't bake anymore. Maybe one day I might get back into it, but not full on like I did back then.
