Happy Year of the š·! So to anyone who doesnāt know, I was born and raised in PerĆŗ. Peruvian cuisine has some of the most delicious dishes Iāve ever had (and one of the many reasons why I miss PerĆŗ) but thereās one type of food in particular that I find as addictive as crack: CHIFA! What is Chifa? Chifa is, simply put, Chinese Cantonese elements fused with Peruvian ingredients. Although at first glance it may look like your average Chinese menu, it is not. Iāve had plenty of Chinese food and, trust, it does not compare. For starters, they have āchaufaā (comes from the Cantonese āfried riceā): the most amazing variation of fried rice in the world š¤¤ They also have familiar dishes like wonton soup and golden shrimp, and others that are quite different like ātallarĆn saltadoā, āpollo cinco saboresā, and āpollo al tausĆā. And they make the most addictive friend wontons Iāve ever had. Chaufa (Peruvian/Chinese fried rice) is a dish I grew up eating, and one Iāve made for myself numerous times. Itās simply one of those dishes Iāve yet to come across at a restaurant in the states. But why bother? I know where to find the best: šµšŖ
