Looks nice and colorful. Something that would probably taste good with your eyes closed too but that would be a waste of the visuals. How did it taste? Was there pumpkin inside?
It tasted good but I forgot about the oregano...should use that in a ratatouille. And I could have used more garlic. No pumpkin, it’s basically eggplant, zucchini and paprika cooked in a tomato sauce.
