Batterer anchovies
I have craved for the sundried fish of my country Philippines. But in Canada they are pricey.So the next best thing is to find an altrrnative that will more or less satisfy our craving.
The result is a crispy battered anchovies that taste divine with lemon.The recipe is so good that it was still tasty a day after.
Back home we prefer to just fry them in vegetable oil with no need to batter.Or we make it into "paksiw"where we cook it with white vinegar and spices.
With use of scissors,I degut it and remove the bones.Then I cover it in breadcrumbs.
I then deepfry them in olive oil till they are golden brown.Then served with lemon.The next day,any leftovet I just simplify microwave.
