It's important to understand the uses-cases for the technology, especially AI. Blockchain is incredible technology, but it's often misunderstood because of all the projects that don't utilize it's full potential. Same with AI. Many can use it in their technology, but few will realize AI's full potential. But regardless, the revolution is underway!
Although I agree with most of what you said I would argue that no one is utilizing AI to its full potential and they won't for at least the next 10-20 years or maybe even more.
