I'm skeptical about many things. How healthy is our food (pesticides, quality from cultivation, etc.), how healthy are our meds, how and why is the human kind so stupid with dumping waste everywhere and so on.
One thing I've been researching for years is chemtrails. The crude conspiracy theory in which chemicals are applied in the stratosphere by airplanes.
In theory it is said that this is done to make people sick... certainly not... or not only?
On the other hand, there have been discussions for years about using airplanes to spread aluminium and sulphur, among other things. Simply to reflect or dim the incoming sun rays.
Various offices, authorities and institutions are considering this as one of the cheapest ways to influence the earth globally. Number of planes, fuel consumption, cost of materials,... everything is already calculated.
Unfortunately, I only have documents written in German. But also the Royal Sociaty reports about this topic. There has already been a question to the European Parliament to which an answer has been given. The honourable Member has literally said that this project has been under way for a long time. So no more theory!
I doubt whether it is done to make people ill. But substances are being spread ... whether they are now healthy is another question.

Do people deny the evidence, perhaps to protect their beliefs and not go into crisis?

That's a very good question. Well, whether it's chemtrails or other so-called conspiracy theories, it's usually the untrustworthy point to carry out such projects behind your back or even with the knowledge of the authorities... then you would have to question everything. How much truth is there in newspapers, how "real" are the news or quite simply could it be different from what the general public says/believes?
These are all unpleasant thoughts that can take away your security. Because we live in peace and freedom. Ok, in some countries there is war, but that is still far away from us. It's all happening with the right things, definitely or maybe not. Oh, don't think about it any further.
Whereby I can now look at it value-free, even if some things don't work. Like HAARP, micro plastic, smart dust, fracking, and so on. We should know better... which is why I can well imagine that many things are done on purpose.
Almost all media are owned from the (so called) 1% and are almost manipulating most of the 99% beliefs for the interests of the 1%.
