"Beetroot, Banana & Chia Frozen Treats" - Fruits & Veggies Monday Contest #29
I'm not entirely sure why I'm making frozen treats this morning, considering the temperature in chilly northern Donegal, Ireland! I'm sitting here wearing three pairs of fleecey pyjama-bottoms, a fur-hooded body warmer, and gloves, but maybe it's because the sun is shining I'm trying to trick my body into feeling warmth from that sun!
Anyway, I had some beetroots to use up and instead of making smoothies I thought why not make something exciting for my little 'un. We went away to visit a friend in England last week and despite all the new things and people he was ever such a good boy, bless his cotton socks. So what better reward than nutrition?! (Not sweeties!!!)
This is about as easy as recipes go... simply peel and dice the beetroot, pop it in a jug/bowl along with ripe banana (the riper the sweeter), and blend them together with a hand blender. Then you can either add chia seeds as they are, or if texture is a bit strange for young children I often grind the seeds up into a powder and stir in, so the texture causes no issues. The resulting taste makes me think of 'summer fruits'... and if you told someone it was made with berries instead of beetroot, I'm certain they'd believe you.
So there we have it! And here are some photos to entice you into making it yourself. I love to photo the stages of recipes made with fruits and veggies, they are so gorgeous and deserve celebration in picture form I think!

Thanks very much! When mixed with fruits they make delicious sweet treats, from smoothies to cakes... anything really! And yes, I too like them mixed with orange... such a delicious combination :-)

Thanks very much for your kind words @annemariemay! In the past I never ate beets because I'm not too keen on them as a side veg, but now I use them all the time in desserts or smoothies or curries... they're so versatile!

You are speaking my language once again! I have some beets left from my salad meal prep this week, so I may have to give this a try. We had a beautiful warm day here yesterday, but still a little bit of freezing night time temps coming back through this week. Spring is almost here I know it! ;)
I thought spring was coming last week when it got a bit milder, but then we've had frost and snow once again, so I'm losing hope and maybe it'll never be warm again!!! (I'm sure it will, I'm just being dramatic). I'm very happy you like the sound of this, and it's so yummy I know you'll enjoy it! Very refreshing!

Your photos make this treat look very enticing! I thought I'd seen just about every kind of recipe for ice cream, but making it with beets is definitely new to me. What a great idea. Thank you for sharing~
Ah, I'm happy to inspire! Years ago it never occurred to me to use veggies in sweet treats, but now I try to get as many into sweet dishes as possible. It would also work with things like carrot, sweet potato, parsnip, squash, pumpkin... so many variations when you use a little imagination! :-)
It is amazing how many ways beetroot can be prepared and eaten. Mixing it with banana is a great idea and I bet it's really yummy, not to mention super healthy for children and adults. Absolutely love it Dear Joanna 🍒 🍌🍑🌿🍍🍓🍇
Thanks so much Lena! I try to give Sky a good varitey of tastes and textures... and temperatures too! He loves frozen treats, but then I guess most children do, so a great way of getting good veggies into them that they may not eat in other circumstances :-)

What a lovely color to brighten up the day, it's wet and cold here but after seeing this so want to make it to see that wonderful color, might might a great nice after school treat for the kids.
Super quick and super nutritious! Do your children like beets or do you have to sneak it into their diet? I made a smoothie for my husband a while ago and told him it was berries and he enjoyed it very much... and then I admitted it was beet and he couldn't believe it!
They like beets in soup and salad, have just notice that some ice-creams have beets in them for natural coloring, might just not tell them it has beets.
When we want them to try things like fresh fruit juices we have made, we get them to guess whats init, by the time they have guessed they have finished from trying to figure out all the ingredients.
They should be alright with it, but will see.
I'll be interested in their verdict if you think to report back when they've tried it! What a great idea to get them to guess... love it!
Made it last night with some other Vegan recipes, will do a post later on. They are still sitting in the freezer, I tried one, but the kids haven't just yet. I don't think I added enough beetroot, first bite tasted like berry but the hit of banana over powered. Might need to try again as only used 3/4 of a small beetroot, and a massive banana.

It's one of those things we ate as children but only pickled from a jar. I don't think I even realised you could eat them any other way until I was older! I'm trying to introduce as many different things to my son whilst he's little, so less chance of fussiness later on (at least that's the hope...!)
