✅ What is the name of the dish that you have made this week? And why did you choose this dish?

The name of the dish that I have made this week is local jollof rice😂, or maybe just jollof rice, I decided to prepare jollof rice this week because I was almost out of food stuff, at home, so the only choice I had was to either prepare rice or swallow and I had just finished eating swallow so I needed a new change of food.

I wanted to eat a different food and the only option I had is to prepare the local rice and the worse part of it is that, the rice has many stones and it's not properly cleaned😩but that's what I have and I have to manage what I have.


✅ What is the process of making it? (Share steps with ingredients)

Here are the ingredients along side the steps and procedures on how to prepare the jollof rice which I made this week, below are the steps and procedures.

Ingredients

  • Rice
  • Fish (Titus)
  • Palm oil
  • Maggi
  • Crayfish
  • Onion
  • Pepper
  • Salt

Step 1 First to begin you would start by getting all the ingredients ready, for example the pepper and onion needs to be washed and grounded or sliced, that depends on your choice but as for mine, I grounded pepper and onion and then sliced some onion also.

Step 2 I said you should get all the ingredients ready because it would make the cooking easier, faster and more fun, after doing that, ground the crayfish, and you are done with preparing your ingredients.

Step 3 For the fish you can wash it with normal temperature water and put into a pot add some little amount of seasoning like maggi, salt or even with Curry and Thyme to taste better.

That was the process I used in the preparation of my fish, the only sad part was that I had already done that since in the afternoon, when I bought the fish, I was kinda busy and I didn't want it to split so I had to prepare it quickly, and the method which I showed above was what I also used.

Step 4 When that was all done, I continued by placing a clean pot on fire with some amount of water, and when the water started boiling I added my washed rice into the rice and stir then covered the pot and allowed to boil for some minutes.

Step 5 After the rice had already boiled for some minutes, I then quickly parboiled the rice by washing it with cold water and also at the same time being very extra careful because there are stones and some other particles in the rice because it's local rice.

Step 6 At this stage some little amount of palm oil would be added to a clean pot and then the fish would also be added so that it would fry for few minutes in other to prevent the fish from getting scattered.

The reason why I did that was to help the fish to be strong or to stay firm while I would be mixing the rice on fire,

Step 7 Now you can add your sliced onion and grounded pepper and onion along side the crayfish and stir then add some water and your seasoning like maggi and salt, then cover the pot and allow to boil and add your already parboiled or washed rice into the boiling mixture.

Allow the rice to cook until it gets soft then add your fish and stir gently then cover the pot and allow to steem for a while before removing it from fire.
