Honey-mustard chicken, mint-lemon couscous, and fresh veggies!
Check out an easy recipe for the delicious and nutritious dish. I hope that I will give you an interesting idea for a quick lunch and you will prepare FIT BOWL at home!



INGREDIENTS (for 2 portions)

CHICKEN IN A MUSTARD-HONEY MARINATE

  • 250g chicken breasts
  • 1 tablespoon of honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon of apple cider (or wine) vinegar 
  • 3 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • ½ teaspoon of sea salt
  • ½ teaspoon of coarsely ground pepper
  • 3 tablespoons of coconut oil (for frying)

MINT-LEMON KUSKUS

  • 140g of couscous
  • 3 tablespoons chopped mint leaves
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • ½ teaspoon of salt
  • ½ teaspoon of coarsely ground pepper

TO SERVE

  • a few cherry tomatoes
  • a few slices of cucumber
  • grated carrot
  • radish
  • chilli pepper
  • natural yogurt

PREPARATION


  1. We start with marinating chicken. Add all the ingredients of the marinade to the bowl or plastic container and mix thoroughly.

  2. Wash the chicken, dry with paper towels and cut off the pellets and fat. Then cut into a fairly thick cube.

  3. Add to the marinade, mix and put in the fridge.

  4. Now we will deal with couscous. Transfer it into a glass, remember the level and add it into a larger bowl. Instead of couscous, pour boiling water into a glass and than pour it into the bowl. The idea is that the ratio of water and groats is 1: 1. Cover the bowl (with a plate) and leave it for 5 minutes.

  5. In the meantime, wash and cut the vegetables with which you intend to serve the dish.

  6. When the couscous is ready, stir it with a fork to make it little fluffy, add mint, olive oil, lemon juice, spices and then mix thoroughly.

  7. It's chicken time!
    Heat the pan over high heat, pour the oil and when it's hot add the chicken. Fry on high heat for 3 minutes on each side in golden color. Drain on a paper towel.

  8. In a bowl with couscous (on top of it) put chicken, chopped vegetables (with little bit salt) and serve it on the table!

I serve the whole bowl with a large spoon, which anyone can put a portion on his plate.
A big advantage of this dish is that it tastes great also cold, so you can take it with you to work or on a trip.It is light, fresh and I hope that soon it will be also on your table!
