Home Made Cheese - HOW TO! (in 25 - 30 minutes)

Many people out there seem surprised to hear that I make my own cheese once a week.

Ingredients

3 liters of milk
6 tablespoons of vinegar
1 tablespoon of salt

Step 1.

Pour 3 liters of milk into a cooking pot.

Step 2.

Once the milk start to cook (just as it is about to rise)
Add 6 tablespoons of vinegar.
Then when it start to bubble up, take it off the flame/oven and let it settle.

Step 3. Then return it back onto the oven/flame and leave it on there for 1 minute until it curdles up. (you will see)

Note: If it doesnt start to curdle up then add one or two tablespoons of the same vinegar brand that you used earlier.

Step 4. Take it off after that 1 minute (or so) and strain it through a very fine strainer (fine like a tea strainer)

After that sprinkle with 1 table spoon of salt (if you like more salty cheese add up to 2 spoons) mix in the strainer (using a table spoon)

Step 5. Then place the cheese from the strainer into a clean (medical) gauze (od a similar type of material)
Drain all the liquid out by squeezing/twisting the gauze. After that once it is drained, place your cheese into a bowl and place into the fridge.

Note: Watch out, because the cheese is HOT and you do not want to burn yourself in any of these steps.

Leave it in the fridge over night.

Tomorrow you have home made cheese (cottage cheese style).

& You know what you are eating!

Note: The gauze that you use for this process NEVER wash it in detergent, always wash it with hot water and boil it afterwards, then it is good for nexts weeks batch of cheese. NEVER USE DETERGENT = YOUR CHEESE WILL SMELL AND TASTE LIKE SOAP!

Oh ! i make a lot of cottage cheese ( in India its called Paneer ) but i always wash the gauze fabric with soap ...its never smelt of soap but i like your tip of washing it in hot water and boiling it afterwards...its of course much better than washing with detergent ! hmm ...will follow that and see for myself ...Thanks :) upvoted you :)

Yes, try it if you have 2 gauzes.

One washed in detergent the other washed and then boiled.
You will notice the difference, the detergent really smells once you stop using it.
Boiling is best, kills all bacteria and no smell afterwards.

I guarantee that you will notice a difference. We all did.

Thanks :) thats a good idea ...i might try both so i know the difference myself ...Thanks so much ...i will let you know how i went ....am pretty sure i am going to go with the boiling ...it just sounds more hygenic !

What is the fat percentage of the milk that you are using? Does it affect the outcome, and are have you tried to add some additional flavors to it, which I am guessing could be done at step 2

I buy fresh full cream milk in the shops, the more milk fat the better the cheese, that is my experience.

No I do not add any flavours, never have tried this.

Will look into it a bit, but we like this cheese as is and in salads.
Perfect for mixing with sourcream and then adding diced fresh vegetables into that, makes a very tasty salad, onion, capsicums, cucumbers.

I guess if I did add a flavour maybe it would be garlic, but then not all my kids would like it, only some. So this works for us as is.

Thank you for posting this, was wondering how to make cottage cheese, had on the list to buy some cheese cloth after seeing a Steemit post months and months ago, could be closer to the start of the year, about how to make paneer cheese.

Very cool! My childhood friend's mother would make feta cheese this way, only she used goats milk and cheese cloth. It's awesome on bread with honey.

I'll try this out! I'm running out of cheese and its price rised a lot!
