Smashed Avocado and Spring in Norway

My favorite fruit, avocado! They are either hard and impossible to cut open or way too ripe. Today I was lucky enough to encounter an avocado that was perfect! I smashed it and put it on my bread.



We don't eat sandwiches here in Norway. We eat "skjeva". An open faced sandwich with weird "pålegg" on it. I'm not sure if there even is a word for "pålegg" in English. The closest thing would be a spread.  

Mackerel in tomatoe sauce, liver pate, butter and cheese, sheep meat and mayo, Norwegian brown cheese and kaviar are some of the thing we would use as "pålegg" on our open sandwich. We often make these at home, wrap them in paper and bring it to work as a lunch. We call that "matpakke" and if we translate that, that would be food package..  We bring these "matpakker" to work, on hikes and when we travel.

The temperature in Norway is 3 C now, but at least the sun is out and it's not as dark as it was one moth ago.
I can't believe that I've been in Norway for one month already! Time flies when you're freezing and working.

I love this time of the year. In a couple of weeks, I'll head into the fjords and celebrate easter with my family at our cabin. Exciting! Easter means fishing, skiing, hiking and food! Stay tuned for updates from that trip.
