Breakfast of roasted vegetables, eggs, leafy greens and steak.

Ive made big changes to my diet over the years, going from eating fast food multiple times a day to now not eating at any restaurants for the last 6 months. We also source are food differently than before. We buy our meats from local farmers at our Farmers Market every weekend this time of year. We look for grass fed, free range meat. We get Chicken, duck, steak, pork and many other meats from them. I also make my own mayonnaise as I was not a fan of all the additives companies put in their mayonnaise.

We buy locally grown lettuce and other vegetables, usually picked within 48 hours of sale. This allows some of it to last nearly two weeks in our refrigerator. We have tried many kinds and like to make pesto out of the micro greens we get. We tend to buy Arugula, Tropicana and Baby Romaine greens. Its hard to even look at it the same now, when I go to major supermarkets I know that lettuce was probably picked two weeks ago and that is why it only lasts a few days for most people.

Our Eggs are farm fresh, non-bleached and non-factory farmed eggs. We buy them at the farmers market as well. Lastly we have the bread we make, we use arrowroot powder to make our bagels, biscuits and other breads. The nice thing about arrow root is you do not need sugar to rise it. So great for those limiting such things in their diet.

With all of these things together, I can make a great breakfast, lunch or dinner. I want to share with you all what my breakfast looked like today.

I spice the meat, eggs and vegetables with turmeric, fresh ground pepper, garlic and onion powder, and pink himalayan salt. I used carrots, green beans, cauliflower, asparagus to roast. I take fresh chopped onion and garlic and I lightly caramelize the onions and garlic before starting the eggs on the cooking pan.

I lay down the Tropicana or Romaine first and then take my home made mayonnaise and paste it on the greens. The mayonnaise I make is hot, I use a half tablespoon of it to make the mayonnaise as its over 40,000 scoville units.

Lastly I try to include fermented food in just about every meal I have. I like kimchi, cole slaw and pickles.

Cooking for myself has been very empowering, as long as I can find the resources I can make it now.

Man you are going all in. Good for you. You probably know store bought pickles and cold slaw are all acid, no good bacteria in them.

Thank you, im investing long term in my body. I try to buy cold slaw with probiotics in it. I dont know if they are still alive when I get them but I hope so. If I can perfect my canning I may go back to growing and pickling cucumbers, I just have alot of trouble keeping them crunchy when I jar them. And eating a soggy pickle is no fun. So im kind of stuck buying store brands, but I try to avoid additives and dyes when buying them. I tend to buy Bubbies pickles brand FYI.

You are on the right track. Stay on it. :-)

thank you I try to eat mostly vegetables. I try to eat different colored ones too, so like purple cauliflower, or yellow peppers, and alot of greens.

thank you, it sure was. Sometimes I look at my plate and say I cant eat all that, but in 30 minutes everything is gone and in my stomach so my body must love it.

The best investment you can make is in your health! Looks like a great balanced meal! I don't like to mix protein and starch. Also I try to get as much different color veg in in a week. Every Saturday I pickle beetroot. Will post my recipe for that on Saturday

thanks for the tips, I try to source multiple color vegetables as well. Different nutrients are in different colored vegetables. Ah I want to know how you do that, looking forward to seeing your recipe.

Yeah we are lucky, many do not know how to get fresh food. They just goto the super market for convenience but for that you lose quality.

Nice, I love growing my own food. We grew some sweet potatoes last year, they have a sharper flavor fresh off the vine. Something I think you can only experience tasting if you grow it yourself.

We seldom eat out or at fast food places either. It’s not easy with a teenager in the house, but I think he has a healthier attitude toward food that will be his norm when he matures. He loves spinach omelettes – it’s the first thing he asked to learn how to cook for himself. He also makes his own Ramen noodle soup, forgoing the MSG laden flavor packet.

Also, my husband would pair pickles with just about any dish! :D

Good hes learning how to cook for himself, my mom bought me a BBQ at around 13 and asked me to grill for her. I had alot of fun doing it, she supervised for awhile but I got pretty good quick.

Hah nice, yeah pickles are good for just about any meal.
