Mung Bean Paste Cakes Part 2
In china we use Mung beans for a great deal of dishes but perhaps one of the most famous and tasty techniques we use is the Mung bean paste cake. This is a traditional dessert that is to be eaten during the warmer summer periods and give a great refreshing taste that is wholesome and nutritional. In Chinese medicine it can be said that mung beans carry a coldness that is essential for the body to counteract the hotness in the body, an obvious choice for blazing summers.
Preparing these desserts is very easy, it involves soaking of the beans and simmering in water to cook them. This allows the soft texture to come into play where it can be mashed down into a paste and mixed with other ingredients for additional flavour. The mixture is often enveloped around red bean paste for a beautiful contrast in taste. It can then be placed into a mould and stamped for a beautiful Mung Bean cake to share with family and frineds.
