Preserving the Harvest - Peppers

Today, we harvested the remainder of our bell peppers! Many of you may know that bell peppers produce well during cooler months so the trick is keeping them alive in the heat of the summer so you can get another large harvest before frost. Our kids harvested all the peppers today and they filled 3 plastic grocery bags full with them. DSC00922.JPG
We kept one full bag for the refrigerator and the remainder we cut into small pieces so we can enjoy them all winter long. We simply core them, cut them into strips, then cut them into 'bite' size pieces. DSC00925.JPG
Next we put them into small snack bags them we put 4-5 small bags into a quart size freezer bag or 10-11 into a gallon freezer bag. DSC00923.JPGDSC00926.JPG
This works great if you have the freezer space but if not you can dehydrate them. We did this a few years ago and they kept very well in a glass jar. This harvest came from 15 plants that we eat from daily/weekly. So if you are a gardener that doesn't keep your peppers alive in the heat of the summer you are missing out on a great fall harvest!! Don't forget to feed your scraps to the chickens, they love eating the seeds!

Ok, the idea of putting snack bags INSIDE the larger freezer bag is GENIUS!! I'm sure you can reuse the larger freezer bags over and over again. My biggest issue when I freeze veggies is trying to get just one serving out of this giant gallon bag! I am going to steal your idea! I have over a bushel of peppers to put up today. Some will go into Chow Chow and be canned, but the rest need to be frozen!

I had no idea that chickens liked eating bell pepper scraps! My parents are looking into getting their first chickens at some point soon but I feel we all have a lot to learn! Thanks!

Chickens make great pets plus they lay eggs. Our first chickens would come when I called their names, they are pretty smart for have a small brain.

I do the same thing. I just use a vacuum sealer.
