A few more history of some cuisines that has fascinating stories(Part 2)

Happy Sunday to you all. I hope you all are well and taking proper care of yourselves.

The second engagement challenge has been announced, and I hope, like the first week; all my steemian friends would love to participate also this time.

Today once again, I am here to share a few more food stories with you all.
Being a food lover, whenever I eat something;
I love to find out the stories behind those delicacies.
Today I am here with the stories of three cuisines that are well-known to the entire world.

Biryani



The journey of biryani began in the year 1593-1631. One day the great Mughal emperor Shah Jahan's queen Mumtaz mahal visited the army barracks of soldiers and noticed that soldiers were not only tired from fighting the battle;
but they were also skimming undernourished.

Then the queen instructed her main chef to prepare something that could provide proportionate nutrition to soldiers.

After several attempts and several repudiations;
Mumtaz Mahal settled on biryani, and she considered it a complete meal. The biryani comes from the Persian word birian, which means fried before cooking.

The cuisine was owned by Persians and Afghans;
and we must not forget to show our gratitude to Mumtaz Mahal while visiting the Taj Mahal.
Because of her, we get a worldwide renowned delicacy.
Another story was also discovered about biryani;
and some food researchers believe that Timor the Lame bought biryani from Kazakhstan to Afghanistan to Northern India.

At that time, nomads used earthen posts and buried them full of meat, rice, and spices in a crater.

'Oon Soru' is a preparation of rice dish from South India(Tamil) in the year 2AD;
and it was prepared by using rice, ghee, meat, turmeric, coriander, pepper, and bay leaf, and was used to feed military warriors. Now we know it as a Hyderabadi biryani.



Butter Chicken

In 1947 a person from old Delhi Kundan Lal Gujral formed a restaurant named Moti Mahal,
which is still situated in Daryaganj. Before partition, Kundan Lal had a restaurant called Moti Mahal Delux in Peshawar.

After the partition, Kundan Lal shifted his restaurant from Peshawar to Delhi.
At that time, there was an issue with refrigeration facilities. To avoid wastage of food, especially chicken tikkas;
he created butter chicken utilizing left chicken tikkas, butter, tomato, and garam masalas. Thus chicken tikkas turn into butter chicken.

In 1950 the restaurant became so popular that celebrities and political administrators from around the world started visiting the restaurant.

Zakkir Hussain, Jawahar Lal nehru( first prime minister of India), Richard Nixon and John F. Kennedy. In its current times, famous master Chef 'Gordon Ramsay' also dwelled ' Moti Mahal'.

Idli(south Indian delicacy)

It is believed that during 800-1200 AD, the kings of Indonesia carried fermentation techniques and the dish Kedli to South India.

According to K.T Acharya Arab traders carried rice balls as they followed a rigorous diet to India;
and later when they decided to settle down in India, with time this delicacy became known as Idli which is served with coconut chutney.

Great post! I appreciate the historical background you provided for these popular cuisines. The story of Biryani and how it came to be a complete meal for soldiers is particularly fascinating. The story of Butter Chicken and how it was created out of necessity to avoid food waste is also an interesting piece of history. The origin of Idli and its connection to Indonesia and Arab traders is also intriguing. Keep up the good work and continue to share your knowledge and passion for food with us.   • My current favorite food is Biryani. If I am at home I make it myself. And if I'm out somewhere, I eat in a restaurant. This biryani is eaten at least once a week.

  • Great to hear the story of discovering this biryani from you. I have read the history of Emperor Shah Jahan but did not find anything about Biryani. Great to hear from you.
