Fish cakes and Hollandaise

We will need Tuna chunks. 1 cup of tuna to one slice of white bread
In a medium bowl, mix together the tuna, mustard, torn white bread, lemon zest, light soy, parsley, chives, and hot sauce. Sprinkle on salt and freshly ground black pepper. Taste the mixture before adding bread crumbs if needed- enough so you can make Patties. See if it needs more seasoning to your taste.

Grill them on a flat non stick pan on medium-low heat. 5 minutes to a side ( may be less, depending on the heat). The patty should be a golden brown on both sides.

Serve immediately with the fresh sauce poured generously on top.

TIP: Take more butter than required. Don't empty your measuring cup. The heavy fats and salt will stay at the bottom!
