Today I would like to show you how you Nigerian Jollof Rice recipe and why you should eat Jollof rice
Rice is a very common meal eating in almost every part of the world. Over here in Nigeria, Rice can be prepared in various forms like fried rice, Rice and stew, Jollof rice, coconut Rice, palm oil rice.
Remember my focus today is on Jollof Rice. You can call it Nigerian Jollof Rice.

- Rice
- Vegetable oil
- Tomato paste.
- Grounded crayfish
- Onion
- Knorr seasoning cube
- Salt
- Grounded pepper
- Smoked cow skin( kpomo) You can decide to use fish or any beef.
Easy Steps to Cooking my Jollof Rice |

The first thing I did was to wash my smoked cow skin with hot water because it is so dried. Over here we call cow skin meat kpomo. We love to add it to our meal especially those from the western part of Nigeria.

After washing the cow skin with hot water, I cut it into smaller bits and put them in a plate.
Next, I wash my rice grains with water. Then I put it in a clean pot to perboil it. I actually per boiled my rice grains for a long time because I wanted the rice to be soft.

As the rice is on fire, I arrange other items to make the sauce and going to be using for the the Jollof. I wash my onions and sliced it into bits. Then I put my cow skin on fire so that it can soften since it's so dried and hard.

While on that, I check my rice on fire to know how soft it is, and yes its ready. I cooked the rice until it's almost done. This time I use a sieve to drain the water from the rice then I added cold water to the rice and sieve again.

You know I like to fry my stew or sauce on a frying pan. So it's time to fry my stew. Next, I put the pan on a low heat and allow the pan to dry a little because I washed the pan. I added my vegetable oil into the pan after the pan has been dried.
My onions goes in next. I fry it a little in the pan, stirring the onions with the onions, before I added my tomatoes paste and stir together. As they all fry, I added my grounded pepper, crayfish, and my seasoning cube.

I added the water used to boil my cowskin and added my cowskin which we call kpomo. Then I added salt to taste and covered the pan for it to boil for about 15minutes.

Afterwards, I bring down my stew from the fire, and pour some portion of the stew into the rice. At this point, the rice is no longer in the sieve but in a pot. I mix the stew into the rice and stir them up together using my turning stick and not spoon. Using your spoon to stir can cause your food to burn fast while cooking.

I put the food on fire adding very little water and allow it to cook under low heat for 10 minutes and my Jollof Rice (Nigerian Jollof) is ready.
