Traditional Pork Steak & Fried Apple / 焦糖苹果猪扒

Pork and apples is a classic dish which dates back centuries. In the olden times before sugar was around, savoury foods were actually served together with sweet fruits for added flavour. Back then, a common choice was apples prepared with pork to achieve the desired effect.

Therefore, I’d like to take a trip to the good old days (they weren’t called that you nothing, you know!) and share my recipe of Pork Steak with Fried Apple. The sweet caramelised apples provide the perfect accompaniment to the salted pork meat. Served alongside the creamy spinach sauce dressing and you have a delicious and nutritious meal for all to enjoy.

So without further ado, here’s the guide of how to make this dish for yourself:


Ingredients (for two persons):

2 x 100g Boneless Pork Steaks
Salt and Pepper
1 tsp Chilli Fakes
3 tsp Olive Oil
1 tsp Butter
2 Apples (peeled, cored and quartered)
½ tsp Lemon Juice
½ Brown Sugar
1 Small Garlic Clove (crushed)
50ml Double Cream
200g Baby Spinach Leaves


Methods:

Step 1: Season the slab of pork well with the chilli flakes, salt and pepper.

Step 2: In a large frying pan, heat 1 tablespoon of oil and fry the pork for 3 minutes on each side until cooked through. Set it aside and cover in foil to retain the temperature.

Step 3: Add 1 tablespoon of oil and butter to the pan (you can use the same one as before if you wish) and add the apple pieces and lemon juice into it. Sprinkle over with sugar, salt and pepper.

Step 4: Continue to cook the contents over a medium heat for 5-7 minutes, until they are soft and caramelized.

Step 5: Melt the butter and oil in a separate pan. Cook the garlic for 1 minute then mix in the baby spinach leaves. Sauté it for 2-3 minutes until cooked. Add the cream, season it well and bring it to the boil.

Step 6: Serve the spinach with the pork steak and apples.

回顾古人的做法,我想与大家分享一下我的焦糖苹果猪扒食谱。煎过的苹果稍焦,吸进了牛油的香味,与鲜美的猪扒一起送进口里,味道多样化,非常好吃!再配上奶油菠菜,简直是最完美的配搭,既美味又有营养!

不多说了,看看以下如何为自己做这个菜的指南吧:

材料(两人份):

2 x 100克 猪扒
盐和胡椒粉
1 茶匙辣椒碎
3 茶匙橄榄油
1 茶匙牛油
2 苹果(切好)
½ 茶匙柠檬汁
½ 茶匙糖
1 小块蒜头(捣碎)
50毫升奶油
200克菠菜叶

烹饪步骤:

步骤1. 用盐,胡椒粉和辣椒碎腌制猪扒。
步骤2. 往锅里加一茶匙油,放入猪扒,两面各煎三分钟直至熟透(我个人喜欢7分熟)。用锡纸包好待用。
步骤3. 往锅里加一茶匙油和牛油,然后加入苹果和柠檬汁,撒上糖,盐和胡椒粉。
步骤4. 苹果继续在中温下烹调5至7分钟,直至他们变软和焦糖化。
步骤5:在另外一个锅里加入剩下的油和牛油,放入蒜蓉煮一分钟,加入菠菜叶再煮2-3分钟。然后添加奶油并调味,煮沸了就好。
步骤6:把做好的焦糖苹果猪排摆上桌,再配上菠菜,可以开餐了!
