Divide and conquer the duck!
Today, I took one of the whole ducks I purchased, and broke it down. I cut the legs, breasts and wings off.
The breasts I will cook tonight, they are going in a duck ramen. The legs will be cooked in a couple of days. The carcass and wings are becoming broth along with the carcass of the previous duck. Also, rendering duck fat.
I don't know why, but it never occurred to me that I could break down my own meat like this. Breasts and legs, in my mind, were things you buy at the store. I love that I'm learning to do things like this!
It becomes very affordable to buy pastured poultry when you use all the parts of it...I quite like this! I plan to stridently avoid buying industrially raised meat in the future.
