Grain Medley with Peas

This dish is so versatile; I use it as a base in many of my grain bowls, it’s great as a side or mixed with roasted veggies. The garbanzo beans and quinoa ensure that you are getting ample protein with this dish, and the filling fiber in all the grains will keep you satisfied long after you’ve eaten.

Ingredients:

  • 2 tablespoons couscous
  • 2 tablespoons red quinoa
  • 2 tablespoons orzo
  • 2 tablespoons split baby garbanzo beans
  • 1 ¼ cup vegetable broth
  • 1 cup of frozen peas
  • 1 tablespoon butter
    -¼ teaspoon garlic salt
  • ¼ cup shredded parmesan cheese

1.In a medium saucepan over high heat, bring vegetable broth to a boil
2.Add in the couscous, quinoa, orzo, and baby garbanzo beans to the vegetable broth, stir well. Allow it to return to a boil, then reduce to low heat and simmer for 13 minutes, covered. Add peas with 6 minutes remaining.
3.Remove from heat, add butter and garlic salt, stir. Add parmesan and stir. Serve warm.

This dish is great on its own or served over a bed of spinach. I like to top it with tofu and tomatoes for an extra touch of nutrition and yumminess.
