RECIPE - "Vegetarian lentils with coconut milk and ginger"

Hey, everybody. How are you? This dish is super complete, because it gives us the iron from the lentils, lots of vitamin D from the peppers, ginger helps our immune system activate against the fridges, and with the touch of lemon vitamin C helps us absorb all this better. So, what better dish than this to start the fall?





INGREDIENTS
  • Red lentils
  • 1 glass of coconut milk
  • 1 glass of water
  • Red pepper
  • Green pepper
  • Onion
  • Tomato
  • Carrot
  • Garlic
  • Ginger
  • Lemon
  • Thyme and cumin (1 tablespoon)


  • Put the garlic and ginger in a frying pan with oil over a low heat for 5 minutes.
  • Add the other chopped vegetables, except the tomato, and cook for 10 more minutes.
  • Crush the tomato and add it and let it cook for 5 more minutes. add the lentils, the water and the coconut milk and let it cook between 15-20 minutes.
  • Finally add the lemon, tomilo and cumin and let stand 5 minutes and our plate is ready to eat!
