---- Basic Garlic Sauce for Copes Patented Lebrittos----
Ok boys and girls, today I am cooking Lebrittos for dinner, this is the Lebanese delicacy known as Kafta or Kofta (depending on where you are at) wrapped up with various vegetables and garlic sauce in a loaf of Lebanese bread. This makes like a burrito BUT it tastes quite different. As such, it was given a name which honored its fusion of cultures.... and so was born the LEBRITTO !!!! FYI i haven't really patented them its just a joke ;) I think i will put some pics up of the finished product when we get into them tonight.... if i can bring myself away from munching them down that is,they so delicious, nom, nom, nom, lol.
Anyhow!!! this is a quick run down of the basic garlic sauce that i make that goes with them, and if you aint got no garlic sauce is it really a Lebritto ?!?!?! the good thing about this sauce is that it is a good basee to make other sauces with. throw in some cucumber and boom its like a Tzatziki. There are other items that could be added to the sauce such as olive oil and lemon (30ml each in these ratios), but this is the basics that will make the sauce taste awesome on its own and the rest is up to personal tastes and what peoples dietary needs :)
Ingredients
200g Natural Yogurt
1 clove of garlic
60ml water
1/2 teaspoon of Salt
Pepper to taste
Method

1 Chop garlic finely, add to mortar and pestle with a teaspoon of water and crush/grind, set aside.

2 In a bowl Place 200g Natural Yogurt, 1/2 teaspoon of salt, 2-3 grinds of pepper (to taste), and crushed garlic.

3 Use 60ml of water in mortar and pestle and stir to get remaining garlic in the water, add garlic water to the bowl of ingredients

4 Stir all ingredients in the bowl until thoroughly mixed through. The consistency is subjective but add more water to thin the sauce add more yogurt to thicken the sauce.
Conclusion
You are now ready to use this sauce to compliment your lebrittos, or dip all sorts of things like bread, vegetables etc, into this amazingly simple sauce. Its also good as an addition to pizzas, making the pizza as normal and then add a spiral with the garlic sauce on the pizza just before cheesing to go in the oven. Because the sauce is so simple it is quite versatile and has many uses beyond lebrittos so experiment away and see where you can fit it in to your meal plans :)
