Fast Lockdown Eats: Pork Bang Bang curry

It's lockdown. You're starving and need tasty food fast. But what to do? All the takeaway joints are Lockdown closed...

Bring on the bang bang!!

Fifteen minutes.. but you would never know from the taste!

You will need

450 grams of pork tenderloin
1 onion
2 cloves of garlic
1 large red chilli
1 teaspoon of ground cumin
Half a teaspoon of ground coriander
Quarter of a teaspoon of ground ginger
Squirt of tomato paste
Tablespoon of soy sauce
Rice for two, a type that takes less than fifteen mins to cook! Mine takes 12 mins.

To make

Start the clock!

Start boiling your rice in a pot, make it whichever way you like it.

Chop your onion, garlic and chilli up finely

Bang in a pan and fry for a minute

Whilst that's frying slice your pork quite thinly and then put in your pan with the onions, chilli and garlic.

Cook for a few minutes on a medium to high heat.

Now add your cumin, coriander and ginger to the meat in the pan and fry for a minute

Add your squirt of tomato paste and stir in

Then a healthy slug of hot water from the kettle

Stir and add your soy sauce

Now simmer this bad boy on a highish heat for a few minutes until it is really reduced and almost sticky.

Your rice should be ready, drain it.

After your rice has drained for a minute, serve up your dish!!

Tuck in to the bang bang pork curry, it's awesome!!

I wish! They don't but my daughter who is now 7 is starting to eat spicy food and I don't think it will be long before she is eating exactly what we eat. Minutes vegetables of course, lol!

I have never had a curry. I am under the impression that Britain is packed with curry purveyors, but they haven't seemed to find a toehold in the parts of America I have inhabited. How will I know I've made it right?

My local grocer does not stock red chilis. I will need to substitute green fresh chilis or dried red chili flakes.

I like fresh green chillies. They are quite zingy. Would be a decent substitute!
