Ingredients
1 medium-sized Brinjal
400g Gram Flour (Besan)
½ tbsp Turmeric Powder (Haldi)
½ tbsp Salt
½ Crushed Chilies
1 tbsp Whole Coriander Seeds
1 tsp Red chilli powder
1/2 tsp Cumin Powder
Method:
- Wash the Brinjal thoroughly and cut in to thin slices about half a cm thick – there is no need to peel the Brinjal, but you can if you want to
- In a separate bowl, add the gram flour with the turmeric powder, salt, crushed chillies and coriander seeds, Red Chilli
- Add enough water to get a batter of thick paste-like consistency – the batter should not run off the spoon
- Add the sliced Brinjal into the mixture and mix
- Heat up oil in a frying pan
- Add the sliced potatoes into the heated oil and fry for a few minutes until golden brown on one side and then flip
- When both sides are golden brown then remove from the frying pan and let the oil drain away
- Serve immediately with mint sauce and enjoy!
